Stone Hill's FM 685 Entrance Became Pflugerville's Restaurant Row This Year, and It Isn't Finished

"We appreciate the loyalty of the customers and all the people that have come here for years and years, all the different generations," co-owner Jack Payne told Community Impact when Springhill Restaurant announced it would close on Oct. 16. Carroll Humphrey opened the place on West Pecan Street in 1985, and it served catfish and shrimp platters, burgers and peach cobbler for more than 40 years.

Five days after Springhill's last service, Cava opened at Stone Hill Town Center. Counting what has opened, what's due by year-end and what's filed for 2027, eight restaurants now cluster on the FM 685 side of Stone Hill. It filled in one building at a time, and state construction filings show when the next ones are due.

One Address Filled Three Storefronts Before Summer

Start with 18725 FM 685. State project records tie that address to the name Keystone, and it's where the year started.

Kura Revolving Sushi Bar soft-opened in Suite 140 on Jan. 15. It was the chain's second Austin-area location. Its grand opening was first set for Jan. 30, and MySA later reported it had moved to Feb. 6.

Tumble 22 opened next door in Suite 100 the same month. Community Impact gives Jan. 26 as its opening date, and the company's own release called Jan. 31 the official grand opening. "We are thrilled to finally bring Tumble 22 to Pflugerville," managing partner Mike Stockton said in that release.

Ike's Love & Sandwiches took Suite 120 on June 5 and held a grand-opening event June 19, according to Community Impact. By midsummer, three of the building's storefronts were serving.

October Moved the Openings Across Limestone Commercial Drive

The second wave went up across the street. Houston-based NewQuest, Stone Hill's developer, announced in August that three restaurants already under development there would open by the end of 2026: Piada Italian Street Food, Hopdoddy and Cava.

Cava came first. It opened Oct. 21 at 18709 Limestone Commercial Drive, Suite 100. It serves build-your-own bowls and pita wraps with steak, lamb, falafel or chicken. Hopdoddy Burger Bar shares the building and was scheduled to open Oct. 27 in Suite 120, Community Impact reported. The menu includes the Saucy Seoul, the Roosevelt and the Magic Shroom, plus three veggie burgers. Until now, the nearest Hopdoddy locations for Pflugerville were in Round Rock, Cedar Park and Leander.

Piada is the one left for 2026. It's planned for a 2,450-square-foot end-cap at Stone Hill's FM 685 entrance, with a target of opening by the end of the year.

Here's the year so far in one place:

Restaurant Location Status
Kura Revolving Sushi Bar 18725 FM 685, Ste. 140 Soft-opened Jan. 15
Tumble 22 18725 FM 685, Ste. 100 Opened late January
Ike's Love & Sandwiches 18725 FM 685, Ste. 120 Opened June 5
Cava 18709 Limestone Commercial Dr., Ste. 100 Opened Oct. 21
Hopdoddy Burger Bar 18708 Limestone Commercial Dr., Ste. 120 Scheduled for Oct. 27
Piada Italian Street Food FM 685 entrance end-cap Targeted by end of 2026

The 2027 Tenants Already Have Paperwork on File

Snooze, the Denver-based breakfast and brunch chain, is headed for Building 1, Suite 230 at 18725 FM 685. This is its second try at the area. In early 2025, Snooze dropped a plan for the same retail center, according to Community Impact's October business roundup. This time the project is registered with the Texas Department of Licensing and Regulation. The Snooze filing is dated Oct. 20 and lists construction from Jan. 15 to May 28, 2027. That lines up with the May-or-June opening Community Impact reported.

Ramen Tatsu-ya is planned for Building 2, Suite 300. Its state filing was registered Oct. 22, with construction from Feb. 8 to June 30, 2027. "Pflugerville is scheduled to open summer 2027," CEO Todd Coerver told MySA. Coerver also told Community Impact the location would sit just south of Tumble 22 and Kura. The menu runs on pork, chicken and vegan ramen, plus the chain's add-on "flavor bombs."

After those two, the rest of Stone Hill fills in. NewQuest's final phase of the roughly 1-million-square-foot center adds about 12,000 square feet of new restaurant and retail space and a shaded pocket park near the Cinemark. It also brings the Austin area's first Kids Empire indoor playground, tentatively set for late 2027.

Put the dates in order and you have a schedule. Piada is due before New Year's. Snooze is due in May or June. Tatsu-ya is due in summer. After that, the developer's own phase runs through 2027.

What West Pecan Street Kept, and What It Gained

Springhill was named for nearby Spring Hill Lane. Its closing ends more than 40 years of catfish dinners on West Pecan Street. "There's no better catfish," customer Chris Carby told KVUE. "There's no other place like this." The restaurant auctioned off its memorabilia online, and KVUE reported the auction would close Oct. 20. Nothing has been announced for the 2505 W. Pecan St. building.

The Pecan Street side of town picked up new businesses this year too, just not restaurants. Pfun Arts at 401 W. Pecan St. held its grand reopening Oct. 24. The expanded space has a fine art gallery, an open studio, workshop areas and an artisan shop that's still on the way. Back Nine Golf opened July 6 at 2606 W. Pecan St., Suite 202. It's a 3,000-square-foot indoor simulator with four bays, open 24/7, and courses include Pebble Beach and St. Andrews.

Downtown's next food and drink opening is tied to a civic building. City Council approved a lease for West Pecan, the coffee shop that opened in 2018. Its second location will be a public-facing space in the new City Hall at 605 E. Main St., with an opening planned for January.

A November Week Built Around Both Ends of Town

With the FM 685 lineup almost complete for the year, a week can use both parts of the map:

  1. Weeknight dinner at Keystone or across the street. Tumble 22, Kura, Ike's and Cava already share one entrance to Stone Hill, and Hopdoddy's scheduled Oct. 27 opening would make it five menus off FM 685.
  2. Saturday, Nov. 7, downtown. The Coffee & Pfuel Car Meetup runs from 9 to 11 a.m. at 100 E. Main St. It's held on first Saturdays alongside the Pecan Street Collective Market, and the Explore Pflugerville listing shows the next one on Dec. 5.
  3. Saturday afternoon on West Pecan. Pfun Arts' new gallery space is at 401 W. Pecan St. Back Nine Golf, at 2606 W. Pecan St., is open 24/7 and sells monthly memberships with unlimited tee times.
  4. Checking in on Piada. It's the last of NewQuest's three 2026 restaurants still to open, with an end-of-year target at the FM 685 entrance.

By next summer the Keystone buildings should add brunch and ramen. Springhill's peach cobbler won't be coming back.
